Chicken Carcass (for stocks and soups)
Organic free-range chicken carcasses are great for making broths, stocks and soups. The bones of an organic bird have a lot to offer, nutritionally rich marrow and collagen and a lot of flavour. We recommend roasting the bones until golden before placing in a stewing pot or slow cooker, covering with water and simmering for a few hours to extract all of their goodness.
All of our chicken properly free range, we also do not source from farms that use ‘quick growing’ breeds meaning they are kept for at least twice as long to mature naturally.
All of our chicken is kept in conditions that allow the birds to express their natural behaviour in a stress free high welfare environment, this gives a deep rich succulent flavour that is incomparable to conventionally raised birds.
