Chicken and white beans

1 tbsp olive oil
100g streaky bacon
1 large onion
2 cloves garlic
2 soy free, free range chicken breasts
200ml bone broth
few sprigs fresh thyme
2 x 400g tins white beans (butter or cannellini are perfect), drained and rinsed
splash of double cream or a dollop of crème fraiche
juice of half a lemon
handful of parsley
- Heat the oil in a pan, slice the bacon and fry for a few minutes until crispy.
- Slice the onion and add to the pan and fry for 5 minutes until softened then bash the garlic and add to the pan.
- Slice the chicken and add to the bacon pan and fry for a few minutes
- Pour in the bone broth and add the thyme and bubble for 5-6 minutes then stir in the beans and cream. Season to taste and add lemon juice. Finely chop and add most of the parsley and serve with the parsley scattered over the top.
