We know it's been a long time coming but we're probably put more thought into The Ethical Burger than any other cut. We have tested 20+ blends of cuts and fat ratios to create burgers that are flavoursome, juicy and have just the right amount of 'fall apart in the mouth.'

Our most premium burger is a coarse cut hand pressed patty made from a coarse blend of chuck meat, rib cap and offcuts of our premium dry aged steak meat, with a high fat content and seasoned lightly with sea salt. These are best cooked very quickly on a very high heat to quickly caramelise the outside, seal in the fat, making for the most mouthwatering juicy burger! Baste them in the pan with the rendered fat to finish.

Made from choice cuts and specially prepared with a much more coarse grind and open texture than our beef burgers our unseasoned 100% grass fed lamb burgers contain the perfect mix of meat and fat for flavour, and a hint of salt.

Our lamb is sourced from farms that practice Holistic Planned Grazing practices that help to regenerate the soil and remove carbon dioxide from the atmosphere by farming in ways that cause biodiversity to increase and plants growth to increase making the soil more resilient to flooding and drought. Our lamb is always 100% pasture fed and are not given antibiotics or hormones.

Our signature seasoning blend uses the finest ingredients from the north east coast of Scotland combining natural unrefined Blackthorn Sea Salt and wild harvested Kombu seaweed with our three pepper mix. The seaweed adds a mouthwatering umami richness without being at all fishy and helps enhance the taste of the already characterful and incredible beef. 

Served in a synthetic skin, for all those who do not or cannot eat pork, this sausage is hand linked, simple and natural but far from basic, and is suitable for all uses, sandwiches, casseroles, fry ups or the BBQ.

With a high level of marbling, it’s a cut well-suited to sauces, packing a punch with a strong taste that will stand up to competing flavours. A great all-rounder, rump steak is a little firmer in texture than other steaks such as rib-eye or sirloin, adding character to the cut. It has a little less intramuscular fat and lends itself well to grilling or barbecuing, with less risk of charring than other steaks. We cut our rump steaks across the whole rump muscle, meaning you will get a little of the cap, canon and tail in each steak.

Bavette is our budget steak: big on flavour, but easy on the pocket.

Bavette, also called Flank steak is a cut of beef taken from the abdominal muscles or lower chest of the steer. French butchers refer to it as bavette, which means "bib". Similarly, it is known in Brazil as fraldinha.

Ideally cooked on a white hot BBQ, lightly oiled with Mellow Yellow, this cut is best cooked very very hot, we mean white hot and quickly to be pink in the middle. It makes an incredible steak sandwich or slice nice and thin to top a steak salad.

Leg of lamb is the ultimate lamb cut. Butterflied and boneless, it makes for a really convenient, fast-cooking, but still show-stopping centrepiece. Roasted or grilled, the leg will cook much quicker than if left whole on the bone and offers an easier carve. 

By butterflying it, we have exposed the leg meat and increased the surface area, making it primed for a marinade. We are therefore delighted to offer this in a range of seasonings - chermoula, ras el hanout, or herbes de provence - as well as plain if you wish to create your own. 

This is a wonderful choice for a BBQ or Sunday roast, and perfect for a special occasion. Half a butterflied leg will feed 3-4 people, a whole butterflied leg will feed 6-8.

Chermoula - Deep and spicy complex herbal flavours from toasted herbs and spices including coriander, cumin, chilli, fennel garlic and sumac complement the chicken perfectly with a little kick to round off the flavour, dare we say perfect with a cold one? Top with rough chopped fresh herbs and a squeeze of citrus.

Good meat is the cornerstone of any successful BBQ and good meat means good for you and good for the planet. Our farmer partners put planet regeneration and animal welfare above all else, naturally, this leads to meat that cooks beautifully and tastes phenomenal. 

All of the farms we source our meat from are managed holistically using regenerative practices that give back to the land and help to create healthier soils. Our beef and lamb farms raise their herds in the most natural way possible. Calves are often raised by their mothers in mixed-age herds, feeding only on natural pasture. Being raised in natural herds allows the cows to exhibit natural behaviours, which is a rare sight in modern farming. Our chickens and pigs are given the freedom to roam and eat as they would in the wild, mimicking nature.
