Apple sauce is to pork what ketchup is to a burger. This recipe allows you to keep it classic or to add some warming spices, just make sure you use proper British Bramley apples, nothing else will do.
Serves 4-6 with roast pork
Ingredients:
3 large British Bramley apples, organic if possible
30g unsalted grass fed butter
15g Organic soft brown sugar
2 whole cinnamon sticks
1t Freshly grated nutmeg
1 Clementine
Method:
Place 3 large Bramley apples, peeled, cored and cut into chunks, 30g unsalted butter, 15g brown sugar, 2 cinnamon sticks, broken in half, 1 tsp ground nutmeg and the juice and grated zest of 1 clementine in a pan.
Bring it to a simmer then lower the heat, cover and cook for about 10 minutes until the apple is tender.
Remove from the heat and stand for 2 hours if you can so the cinnamon infuses. Remove the cinnamon sticks before serving.
