Christmas spiced chicken wings

After you've made up the spice mix you can use it for cookies, to add to a latte or frosting.
Serves 4-8 depending on sides and hunger levels.
Ingredients:
For the spice mix - simply combine in a bowl:
40g ground cinnamon
30g ground coriander
2 tsp nutmeg
1 tsp ground ginger
¼ tsp ground cloves
1 orange , zested
1 lemon , zested
2 tsp light brown sugar
1 tsp sea salt
For the wings:
2kg Ethical Butcher soy-free chicken wings4 tbsp plain flour
4 tbsp oil
100g festive spice mix - above
2 oranges , juiced
2 tbsp honey
pinch of salt , to serve
Method:
With a heavy knife cut the wing tips from the wings and set aside for to use in a stock or broth, can be frozen for later use.
Put the chicken wings in a large bowl with plain flour and season well.
Toss together to coat, then spread out over a large baking tray, drizzle with oil and cook for 40-45 mins, turning halfway through.
When the chicken wings are nearly done, put the festive spice mix in a saucepan with the orange juice and honey.
Warm gently, then pour over the chicken wings, toss together, and return to the oven for a further 10 mins or until sticky.
Sprinkle with salt to serve. For a Christmas look serve with sauteed kale garnished with pomegranate seeds.
