Venison loin is a cut of meat that is found along the back of a deer, alongside the spine. While they aren't the same as a tenderloin, they are considered the most tender cut of venison.
Loin is best served rare or medium rare, keep it simple and don't overpower this delicate meat with strong flavours.
Our venison is sourced from Packington Estate which is ancient parkland. The deer graze pasture and browse the trees in a natural landscape and are not given any supplemental grains.
