The Contre-Fillet is carefully trimmed, boned and rolled before being finished with a layer of fat, which naturally bastes the beef as it roasts, keeping the meat succulent while developing a rich, full flavour.
Our beef comes from slower-grown cattle raised on regenerative farms, grazing diverse pastures of grasses, wildflowers and herbs. This approach to farming, combined with carefully selected breeds and skilled butchery, produces beef with genuine depth and character.
