Cut from the shoulder then immaculately trimmed, our diced pork boasts a rich flavour and a meltingly moist and succulent middle. Shoulder of pork holds a good level of marbling, derivative of the breed and life our pigs have lived. Marbling keeps the meat juicy and deliciously sweet.
Rich marbling of sweet fat and succulent meat makes this cut a versatile steak that can be seared on the outside and served pink in the middle as you would a beef steak.
This breed is often called the Kobe beef of pork as it's known for its rich marbling. Mangalitsa are originally a Hungarian pig and are unusual looking as they are covered in curly fur like a sheep making them well suited to a life outdoors year round.
Iron age pig
These pigs are a Tamworth crossed with wild boar. Iron age pigs give a slightly darker and gamier meat but with a light sweet fat content from the Wild Boar element and were originally cross bred for a TV show on the Iron Age.
We source our pork from a regenerative system in North Yorkshire with the pigs running in 250 acres of ancient woodland. Each pig has 2.5 acres of space meaning they are very low density.
The pigs root and trample undergrowth in the forest clearing plants such as ivy and bramble and fertilising tree growth managing the forest.
The forest has never had any agricultural chemicals applied so is by definition organic but not certified.
Shelters are provided for the pigs to use as they wish during inclement or cold weather but they spend most of the summer sleeping outside where they choose.
Much of the pigs diet comesfrom their own foraging in the woodland and is made up of plants roots and insects but their diet supplemented with a mix of UK sourced grains and seed meals.
