Lamb Karahi 

Serves 4

10 minutes to make 

30-40 minutes to cook


2tsp olive oil 

500g sliced or diced lamb

good knob of butter

1 onion, sliced

2 cloves garlic finely sliced

2 tsp cumin seeds

2tsp ground coriander

1tsp turmeric 

2 dried red chillis or 1tsp chilli flakes

400g tin chopped tomatoes

1tsp garam marsala


  1. Heat the oil in a pan and brown the lamb all over. Scoop out and set aside. Add the butter in a pan and gently fry the onions for 10 minutes until softened. Add the garlic and spices and fry for a minute more.
  2. Add the tomatoes and browned lamb and a good splash of water and plenty of seasoning and bubble for 30 minutes, adding more water if you need, then add the garam masala.
