Herb crusted pork tenderloin

1tbsp olive oil, plus extra to bind
1 x 500g pork tenderloin
150g fresh white breadcrumbs
1 clove garlic, crushed
zest of a lemon
1 handful chopped parsley
1 handful chopped soft herbs (tarragon, chives, dill)
2 tbsp mayonnaise
1tbsp Dijon mustard
2tbsp capers, chopped
extra virgin olive oil to drizzle
Heat the oven to 200c fan 180c.
Heat the oil in a heavy based pan, season the pork and seal all over and
Mix the rest of the ingredients together, adding enough olive oil to bind and season.
Press the mixture all over the tenderloin and bake in the top of the oven for 12-15 minutes until the pork is cooked and the top golden.
