This Easter FarmBox showcases lamb from Downlands Farm, managed by James Gilboy, whose approach centres on regenerative grazing, soil health and long-term land stewardship. Livestock are raised on diverse pasture within a system designed to improve soil structure, water retention and biodiversity over time. Carefully selected for flavour and balance, these cuts reflect farming that prioritises animal welfare, ecological responsibility and measurable improvement across the whole farm system.
Meet the farmer
James Gilboy is the owner/farmer at Downlands Farm, a historic Surrey -Hampshire farm that champions regenerative farming, where animals, people and wildlife work together to restore soil and nature while producing richer, pasture-raised meat and eggs.
Under his stewardship, the estate’s livestock - from Shorthorn cattle to woodland-raised poultry and of course Downlands Lamb - graze fields and woodlands as part of an integrated ecosystem, improving soil health, encouraging biodiversity and strengthening the long-term resilience of the landscape.
This approach reconnects people to the origins of their food.
James shares insight into his farming philosophy, daily practice and the thinking that shapes the farm.

The Downlands Easter Lamb FarmBox brings together a carefully selected nose-to-tail collection from a single flock raised on one regenerative farm.
This is pasture-led lamb from Downlands Farm - where farmer James Gilboy manages land with long-term soil health, biodiversity and animal welfare at its core. The flock is slow-grown on diverse pasture, producing lamb with natural depth of flavour, balanced fat cover and integrity you can taste.
This FarmBox reflects our commitment to whole-animal butchery. Every cut has purpose. Every part is valued.

THE LAND
At Downlands, everything begins with the land. Soil health sits at the centre of the farming system, shaping how pasture grows, how animals live, and the quality of food produced. By working with natural processes rather than against them, regenerative farming rebuilds soil structure, increases biodiversity, improves water retention and strengthens long-term resilience. As James puts it, regenerative farming “gives native wildflowers, grasses, legumes and herbs a chance to grow,” restoring balance by removing unnecessary machinery and chemicals from the system.
