We believe this is a unique way to sell chicken as we balance the carcass.

Our butchers have broken down a single bird into breasts, legs and thighs and wings and carcass for you to be able to make 3 or even 4 completely different meals from one bird with minimum fuss and most importantly, nothing is wasted.

This pack includes:

Tarragon seasoned breasts

Our signature salt and pepper mix has a generous addition of gorgeous tarragon and a little organic olive oil to help the marinating process for a classic pairing that can be cooked in a few different ways. Either pan fray to sear and finish in the oven, or grill from scratch, perhaps finish with some full fat cream for a luxurious classic dish.

Chermoula seasoned legs

This seasoning has become an absolute favourite with our directors who were fighting over the recipe tested cook up! Spicy, rich and utterly delicious this robust seasoning combines spices such as toasted cumin, chilli, sumac and coriander.

Unseasoned wings

Cook these as you like or put them in the pot with the carcass to make an even richer broth

The carcass

We supply the carcass from the same bird that is broken down. Simply boil with the classic carrot, onion & celery, season to taste and add a few herbs if you wish, cook for 3 hours or so in a litre to 1.5 litres to make delicious collagen-rich stock or broth.

The offal

In this case its the liver and heart of the same chicken, either pan fry in a little butter, garlic and perhaps thyme for a super nutritious snack or add to one of the other dishes when cooking but don't miss out of the vitamins packed in these cuts

All of our chicken is properly free range, and we also do not source from farms that use ‘quick growing’ breeds meaning they are kept for at least twice as long to mature naturally. All our farms practice regenerative agriculture.

All of our chicken is kept in conditions that allow the birds to express their natural behaviour in a stress free high welfare environment, this gives a deep rich succulent flavour that is incomparable to conventionally raised birds.
