Underrated and inexpensive, yet fabulously tasty and succulent: the lamb neck is sure to impress. Cook fast or slow: a quick sear in a hot pan for a blushingly rare meat, or a slow cook to melt away layers of marbled fat and bring out a deep, succulent taste. Prized by chefs, its flavour is unlike any other cut and while it may not be ’glamourous' we think it will be a big hit on the foodie scene very soon.
