Pork and Fennel salami
An award-winning pork and fennel salami traditionally made in the style of an Italian Finocchiona salami. This salami has a lovely, long-lasting flavour in which the fennel compliments the sweetness of the pork. The organic pork is from Fowlescombe Farm in Devon and from other carefully selected farms with similar values. Here pigs live a healthy, free-range life in the fields and woodlands, foraging and picking up plenty of wild plant foods as they root around.
Pork Capicola
A highly prized charcuterie product similar in taste to long-aged prosciutto ham. Made from the neck and shoulder fillet of pork, simply cured and air dried for a minimum of three months. This product has the most incredible marbling throughout making it a highly prized charcuterie product and an essential part of any charcuterie platter. Great depth of flavour, a very close cousin, in taste, to any long-aged prosciutto ham. For many Capicola is the King of cured meats.
Beef and Smoked Garlic Salami
Much of the beef comes from pedigree English Longhorn and Beef Shorthorn cattle, raised on Fowlescombe Farm in Devon. The farm is Pasture-for-Life certified, meaning the cattle exclusively eat grass and silage from the farm, with no cereal supplements. This allows these historic breeds to grow slowly and naturally, producing beef of exceptional quality. Simply flavoured with smoked garlic and a little pork fat, for a soft, yielding texture. A touch of smoked garlic produces the signature savoury taste and aroma in this delicious salami.
Beef Bresaola
Also made using pedigree English Longhorn and Beef Shorthorn cattle raised on Fowlescombe Farm. These animals have grown slowly and fed entirely on grass to produce incredible beef with a rich and dense but yielding texture. The beef Bresaola has been lightly and simply cured with rosemary and air dried for a minimum of 3 months. The result is a delicate, melt-in-the mouth product that has very good length and depth of flavour, dense but with an incredibly tender bite. A Palma ham equivalent, made from beef rather than pork.

Minimum order is £50. Orders from £50 to £85 will be subject to a £5.99 delivery charge. This is our launch offer which we have extended due to the current lockdown. Our regular shipping charge is £10.
Orders over £85 qualify for free shipping.
Orders are delivered 2 working days after being placed.
We do not offer a Monday delivery. All orders placed between 07:00 Friday and 07:00 Monday will be delivered on Tuesday.
From time to time delivery may take an addition day due to seasonal variations or volume. If you are ordering for a gift or a dinner party we advise to always allow an extra 24 hours. Your meat will stay chilled in our packaging - which allows meat to be in transit for 48 hours.

If nobody is available at the primary delivery address (nominated by you at the time you place your order) to take delivery of the order, we will leave notification of the delivery instead either to the secondary delivery address or secure place (nominated by you at the time you place your order).
Our deliveries are made with “no signature required”. In the event that nobody is available to take delivery of your order at either your primary or secondary delivery address or you ask us to leave your goods unattended at a secure place, The Ethical Butcher expressly disclaims all liability that may arise in consequence of the delivery being left unattended, including, without limitation, theft, tampering or contamination, however caused.
If your delivery is refused or not accepted at a recipients address, we can not take responsibility for this and can not offer a free replacement.
Currently we do not ship to the following UK post codes. This is subject to change. It is the buyers responsibility to be aware of these limitations as no refund will be offered for orders placed to these postcodes.

In these circumstances, we will contact you as early as possible to rearrange the delivery time.
