Auguste Escoffier named this specific cut of the tenderloin the Chateaubriand. This is possibly the most luxurious cut of beef available and can be roasted, BBQ cooked or reverse seared in a pan.

Our cut is approximately 600g and serves 3-4 people

All of our beef is 100% grass-fed without exception. Most of our producers are PFLA certified and many of them are using Holistic Planned Grazing techniques to put more carbon into the ground than the farms release meaning a net loss for the atmosphere.

The farmers we select from keep rare breeds that are best suited to the land they are farming. These breeds are chosen for their hardiness meaning they can thrive on pasture and be outside in all but the very worst of weather.

All of our beef is slower grown to achieve a deeper richer flavour that is linked to the land and the variety of herbs, grasses and wildflowers that the animals eat. We recommend trying the same cuts from different farms to see the difference that breed and diet can make. This really is the craft meat revolution.

Delicious

Absolutely delicious. Just lightly seasoned. Meat just melted in the mouth.

Sensational flavour

I split into four steaks and with only a tiny sprinkle of salt the flavour was sensational and they basically melted in the mouth - would recommend to anyone!

Sublime

Very special NYE meal for 4 people, from Cheswell Grange.

Seared for 2 mins each side in hot melted butter, then into the oven at 170 (fan) for 15 mins.

This was simply delightful. Blushing, medium rare, full of flavour and melt in the mouth. Can’t wait to use the second one I’ve popped in the freezer.
