Description

Our flagship product. A classic fermented and air-dried ham made from Iberian pork, the finest breed in the world.

We mature the ham for up to six months, leaving a small amount of outer fat to slow maturation and allow tannin-rich proteins to develop. When sliced, the ham is delicate with slowly-building flavour, delivering a savoury sweet balance and mouth-watering texture.

The pork is outdoor-reared, raised by British farmers who provide the space, diet and time for this very special breed of pig to thrive.

Ethically Sourced

Meat from animals raised on diverse pasture develops depth of flavour, better texture and more consistent quality.

This is carried through in how we cure and prepare our products, allowing the raw material to speak for itself.

Orders made from this Christmas range will be delivered between the 18th - 22nd December.

Iberian pork (145g used in 100g finished product), salt, demerara sugar, spices, preservative: sodium nitrite.
