You've heard of beef brisket - what about pork brisket! Brisket is made up of the two pectoral muscles from where the leg joins the chest. It needs to be cooked low and slow to become tender and is therefore a popular cut in the US originating in Louisiana where it is smoked for many hours.
It's not well known in the UK and we think that's a pity as it's full of flavour. Our butchers cut it to have just the right amount of fat to render into t he meat as it cooks. We highly recommend cooking it with a dry rub well wrapped in foil cooked slow until tender.
Soy-free Rare Breed
Our soy-free pigs from Redwood Farm are a mix of rare breeds including Gloucester Old Spot and Oxford Sandy and Black. The pigs are kept outdoors for all except the coldest winter months when they are provided with housing complete with a deep bed of straw and plenty of natural and nutrient rich silage to replace their usual pastured diet. Farmer Amy Chappell creates her own mix of pig feed, completely free of soy, using mostly wheat and barley, beans, rapeseed meal and peas from local, trusted, regenerative sources. The pigs rely on pasture and woodland for the majority of their feed, through rooting, foraging and grazing.
Dingly Dell rear their own herd of pure Red Durocs which are noted for their high levels of intramuscular fat (marbling). Much of the pig's diet comes from their own foraging in the pasture and is made up of plants roots and insects but their diet is supplemented with a mix of UK sourced grains and seed meals. They are kept in a regenerative system in Suffolk and the farm has planted huge areas of wildflower meadows to improve biodiversity.
We source our pork as carefully as we source all of our meats, in that we find animals that have had a natural life where possible also performing vital land management roles such as forest clearing.
The terms ‘free range’ and ‘outdoor reared’ do not have clear legal definitions and do not necessarily meet our requirements.
We visit every farm we source from to ensure that the highest possible standards of welfare are used throughout the entire life of the animal.
Minimum order is £50. Orders from £50 to £85 will be subject to a £5.99 delivery charge. This is our launch offer which we have extended due to the current lockdown. Our regular shipping charge is £10.
Orders over £85 qualify for free shipping.
Orders are delivered 2 working days after being placed.
We do not offer a Monday delivery. All orders placed between 07:00 Friday and 07:00 Monday will be delivered on Tuesday.
From time to time delivery may take an addition day due to seasonal variations or volume. If you are ordering for a gift or a dinner party we advise to always allow an extra 24 hours. Your meat will stay chilled in our packaging - which allows meat to be in transit for 48 hours.
We do not ship outside of the UK.
We will always aim to deliver your order within the delivery slot requested by you at the time you place your order.
If nobody is available at the primary delivery address (nominated by you at the time you place your order) to take delivery of the order, we will leave notification of the delivery instead either to the secondary delivery address or secure place (nominated by you at the time you place your order).
Our deliveries are made with “no signature required”. In the event that nobody is available to take delivery of your order at either your primary or secondary delivery address or you ask us to leave your goods unattended at a secure place, The Ethical Butcher expressly disclaims all liability that may arise in consequence of the delivery being left unattended, including, without limitation, theft, tampering or contamination, however caused.
If your delivery is refused or not accepted at a recipients address, we can not take responsibility for this and can not offer a free replacement.
Currently we do not ship to the following UK post codes. This is subject to change. It is the buyers responsibility to be aware of these limitations as no refund will be offered for orders placed to these postcodes.
Events outside our control, for example, extreme weather conditions, may occasionally mean we are unable to deliver your goods at the time agreed. In these circumstances, we will contact you as early as possible to rearrange the delivery time. In such an event, our liability to you shall be limited to the price of the goods ordered and the cost of delivery.
