BONE IN SIRLOIN: Premium Regenerative Dry Aged Dexter
Bone in sirloin offers an equally superior eating experience to a cote de bouef, but with a slightly higher meat to fat ratio, and a better option for the single diner.
This particular beef was produced by Farmer David McArthur, up in Scotland. The quality of Scottish beef is world renowned. McArthur adopts regenerative farming practices, rotational grazing methods, and the cattle are 100% pasture fed for life.
These steaks have been primarily selected for the breed. Dexter is one of our favourite breeds here at The Ethical Butcher, and a favourite among true steak connoisseurs. Those who know are familiar with the breed's mystique; it is tiny (they are Britain's smallest breed at a diminutive average weight of 300-350kg), meaning a limited yield off each carcass: prized meat! They have an excellent propensity to put on good fat cover, intramuscular marbling, and deliver superior eating quality.
All of our beef is 100% grass-fed without exception. Most of our producers are PFLA certified and many of them are using Holistic Planned Grazing techniques to put more carbon into the ground than the farms release meaning a net loss for the atmosphere.
The farmers we select from keep rare breeds that are best suited to the land they are farming. These breeds are chosen for their hardiness meaning they can thrive on pasture and be outside in all but the very worst of weather.
All of our beef is slower grown to achieve a deeper richer flavour that is linked to the land and the variety of herbs, grasses and wildflowers that the animals eat. We recommend trying the same cuts from different farms to see the difference that breed and diet can make. This really is the craft meat revolution.
