Venison haunch is a great cut of deer to roast but as it is so lean we have wrapped it in smoked streaky bacon to create an incredible roast. Similar in texture to a rump or topside of beef, it is fine grained yet has plenty of character that is released when seared then roasted until blushing pink in the centre and caramelised on the outside. A haunch of venison is a single muscle that has been masterfully butchered and removed seam by seam from the hind leg of a deer. Our venison haunches are the perfect size for a small family or when entertaining 4 people at a dinner party, pairs well with redcurrant jelly or jus.
To cook this roast, sear in a hot pan turning frequently until starting to caramelise all over then put in a hot oven at 220c for another 20 minutes to be cooked rare, a little longer for medium rare or medium as preferred. Rest before carving.
Our venison is sourced from Packington Estate which is ancient parkland. The deer graze pasture and browse the trees in a natural landscape and are not given any supplemental grains.
