Wing rib is sirloin on the bone. Not much more need be said. This is a pure showstopper. When cooked on the bone the simple sirloin develops a depth of flavour that cannot be matched with a humble steak. A cut for true connoisseurs.

All of our beef is 100% grass-fed without exception. Most of our producers are PFLA certified and many of them are using Holistic Planned Grazing techniques to put more carbon into the ground than the farms release meaning a net loss for the atmosphere.

The farmers we select from keep rare breeds that are best suited to the land they are farming. These breeds are chosen for their hardiness meaning they can thrive on pasture and be outside in all but the very worst of weather.

All of our beef is slower grown to achieve a deeper richer flavour that is linked to the land and the variety of herbs, grasses and wildflowers that the animals eat. Minimum order is £50. Orders from £50 to £85 will be subject to a £5.99 delivery charge. This is our launch offer which we have extended due to the current lockdown. Our regular shipping charge is £10.

Orders over £85 qualify for free shipping.

Orders are delivered 2 working days after being placed.

We do not offer a Monday delivery. All orders placed between 07:00 Friday and 07:00 Monday will be delivered on Tuesday.

From time to time delivery may take an addition day due to seasonal variations or volume. If you are ordering for a gift or a dinner party we advise to always allow an extra 24 hours. Your meat will stay chilled in our packaging - which allows meat to be in transit for 48 hours.

We do not ship outside of the UK.

We will always aim to deliver your order within the delivery slot requested by you at the time you place your order.

If nobody is available at the primary delivery address (nominated by you at the time you place your order) to take delivery of the order, we will leave notification of the delivery instead either to the secondary delivery address or secure place (nominated by you at the time you place your order).

Our deliveries are made with “no signature required”. In the event that nobody is available to take delivery of your order at either your primary or secondary delivery address or you ask us to leave your goods unattended at a secure place, The Ethical Butcher expressly disclaims all liability that may arise in consequence of the delivery being left unattended, including, without limitation, theft, tampering or contamination, however caused.

If your delivery is refused or not accepted at a recipients address, we can not take responsibility for this and can not offer a free replacement.

Events outside our control, for example, extreme weather conditions, may occasionally mean we are unable to deliver your goods at the time agreed. In these circumstances, we will contact you as early as possible to rearrange the delivery time. In such an event, our liability to you shall be limited to the price of the goods ordered and the cost of delivery.

9 fantastic meals from one great joint

Had the wing rib as a Chrismas dinner, had enough meat left over for a total of 9 portions. It was amazingly tender and tasty (its grass fed sirloin after all).
The fat was used for loads of great tasting roast spuds which were chopped up for mini cubed chips the next day, There's still a load of this great tasting lard to use up over the next weeks.
You don't get flavour like this from supermarket meat. It super simple to cook, the whole rib (2.36kg) was seasoned and olive oiled tthen cooked in 3 statges: 20 mins on high (200C fan) 1 hr 20 on low (150C fan) and 30 mins rest. No messing about, rare inside, medium on the outer layers, all tender and easy to slice. Reheated easily and tasted great cold over the next 2 days. Forget tough, cardboard beef this is what you should be eating.

Sooo yummy!

Thanks to the weather we couldn't cook it on the barbecue but we cooked it on a high temperature grill in the oven. Just divine!!!

We cooked this joint on the BBQ for a Sunday Roast and it was absolutely delicious! So much flavour!
